Even amongst the progressive Los Guacharos Association in Bruselas, some individuals, like Jose Uribe Lasso, are taking further steps towards excellence. This 100% Caturra lot shows dedication to variety separation, as well as intentional processing: this coffee was fermented in covered bins and cold conditions for 36 hours to extend flavor development before it was washed twice. Drying is done in multiple stages — a warmer set of raised beds to start the process, and cooler, covered raised beds to extend drying times and consistency in the coffee. It’s exciting to be able to offer unique lots from Los Guacharos, and we anticipate even more unique variety and processing experiments form Jose in the future.
