Their community driven systems are a great example of producer led innovation around soil health and cost reduction for farmers. The group has nearly transitioned entirely away from chemical fertilizers. Producers don’t use any pesticides or herbicides, opting instead for biodynamic and regenerative practices.\u003c\/p\u003e\n\u003cp\u003eThis reserve lot comes from a selection of farmer-members of Los Guacharos. While each producer has their own techniques, they are all harvesting cherries at peak ripeness, depulping them, and then allowing to ferment for a period of time before washing. Finally, they are dried on raised beds or patios with shade cloth.\u003c\/p\u003e\n\u003cp\u003eThis lot is made up 100% of Pink Bourbon. Many producers in the Los Guacharos cooperative, as well as others in Colombia, have been planting more pink bourbon, a variety that emerged in Huila in the 1980s. What’s special about pink bourbon? With its orangey pink ripe cherries, it’s thought to be a hybridized cross of red and yellow bourbon. Recent research might indicate that it is actually more closely related to Ethiopian landraces. Practically speaking, producers find it to be disease resistant, high yielding, and low maintenance. At the same time, it produces a unique and exciting flavor profile with high cup quality.\u003c\/p\u003e\n\u003cp\u003eThis is our ninth year being able to offer Los Guacharos in our lineup and the third offering of a pink bourbon community lot. David is General Manager of El Morito, a collective of more than 150 independent smallholder producers. El Morito started as a family company when David was a young boy, but formalized as an association in 2022 and now serves to assist producers with aggregation and export while encouraging autonomy in processing. When he is not leading El Morito, David is focusing on growing and processing his own coffee. He has planted his farm with distinctive varieties seeking the highest quality in his product, including gesha, marshelle, and sidra. \u003c\/p\u003e\n\u003cp\u003eThis varietal lot from La Neblina is all sidra, a compelling modern variety of arabica coffee. It is most commonly grown in Ecuador and Colombia, but the genetics point to some variation depending on where it’s found. Typically, it’s known as a natural mutation of bourbon, but may be closer related to more distant Ethiopian heirloom varieties. Regardless, if you see sidra variety on the label, you can expect an especially bright and aromatic cup with high florality and intense sweetness, and this La Neblina coffee is no exception. You might even be surprised that it comes from Peru. While it sounds exotic, it has a certain comforting sweetness with a silky smooth body, and clean fruit flavors, thanks to the careful and intentional washed processing.\u003c\/p\u003e\n\u003cp\u003eSpecialty coffee in Peru has tremendous potential. Of the roughly 223,000 smallholder producers, only one quarter belong to cooperatives. The couple inherited the farm from Pillo's father, who is also a coffee producer and continues to farm nearby. After moving onto the property, they added 26,000 Pink Bourbon trees to their existing 11 acre planting of 20,000 trees. In addition to coffee, Sandy and Pillo grow plantains, yucca, and sugar cane to feed their workers and themselves. They also keep four cows for milk.\u003c\/p\u003e\n\u003cp\u003eAfter the cherry is collected from the fields, Pillo carries out the post-harvest processing in the wet mill. The harvest is put into large tanks filled with water to \"float\" and sort the coffee. The next day, Pillo de-pulps and ferments the beans for another 60 hours in tanks. He then washes the coffee once and puts it out to dry on his rooftop-style dryer for up to 18 days.\u003c\/p\u003e\n\u003cp\u003eAcross Latin America, coffee harvests rely on an often unseen migrant workforce. Many pickers face unstable conditions and low pay, while farmers struggle to secure skilled labor during critical harvest windows, challenges made even harder by climate unpredictability. To help address this, exporter Azahar launched the Pickers Project in 2017 through its Colombian foundation, Manos al Grano. The program trains full time professional pickers and provides them with stable salaries and benefits, then deploys them to partner farms as needed. For pickers and for producers like Sandy and Pillo, initiatives like this represent a meaningful step toward a more sustainable and equitable future for coffee-growing communities. \u003c\/p\u003e\n\u003cp\u003ePillo and Sandy’s dedication to their farm and community represents a younger generation of coffee growers from southern Huila who also honor their family's legacy. Felipe is a part of the leadership team of El Morito as the warehouse manager. El Morito started as a family company, but formalized as an association in 2022 and now serves to assist all of its producers with use of shared infrastructure, aggregation, and export, while encouraging autonomy in processing. Felipe also operates a guinea pig farm at El Roble, just one creative way to develop a more diversified and sustainable livelihood.\u003c\/p\u003e\n\u003cp\u003eThis El Roble lot is yellow caturra variety. Caturra is fairly common. Despite being discovered in Brazil, it really gained popularity elsewhere in Central and South America because its smaller plant size made it easy to plant and harvest in high elevations on steep terrain. Red caturra is more well known, but occasionally a mutation results in yellow fruit.
