Saúl Vasquez Ardila is one of 6 brothers in a family of coffee producers. He and his wife, Elci Milena Gonzalez run Finca La Primavera in Palermo, Huila bordering some of his brothers farms. On just 4 hectares of land, they grow three varieties of coffee along with
plantains, corn, and beans that are planted alongside the coffee trees. Situated just south of the Tatacoa Desert and adjacent to Parque Natural Regional Cerro Banderas de Ojo Blanco, Palermo is privileged with an ideal climate for cultivating coffee.

In recent years, water conservation has become a growing concern amongst coffee farmers and producers. Three years ago, Saúl switched from traditional processing methods to a water-preserving Ecomill demucilager system in order to prevent water source contamination. Saúl states: “We have to economize our water usage.” Saúl then uses a mechanical washing process which will wash an entire load of beans with one liter of water. The farm is also able to irrigate his crops with several nearby naturally occurring springs and receives a good supply of annual rainfall. In further efforts to conserve water, the coffee is depulped and is dry fermented for 60 hours, then washed and mechanically dried. Mechanical dryers are increasing in popularity in Colombia, particularly in regions of high humidity like Huila.

Colombia, and Huila in general is undergoing a lot of experimentation and innovation in the coffee industry. Since harvest occursnearly year round here, farmers are always looking for unique ways to help improve the cup. Our partnered exporter Azahar supports farmers with recommendations and allows the farmer to make their own
decisions on processing and fermentation times based on their experiences. Saúl Vasquez’s coffee stood out to us with its non-traditional processing methods, and we’re excited to share its unique and innovative story and flavor profile.
