High elevation grown coffee has long since been a standard for unlocking quality. Cooler temperatures help cherries develop slower, and higher elevation farms tend to average cooler temperatures with cold nights and hot days. With this in mind, the valley that Camenzo is located in shield’s Omar’s farm from hot winds and heavy sunlight, giving it a stable cool daily temperature. With consistent cloud cover for shade and a more stable lower temperature from day to night, the trees on Omar’s farm are able to consistently develop cherries that have high concentrations of fruit acids and fruit sugars while maintaining a consistent ripening schedule.
