The Shakisso farm encompasses 640 semi-forested acres in the Guji Zone of Ethiopia and is operated by producer Haile Gebre. Gebre has earned the nickname “The Godfather of Guji” for his pioneering work in developing the coffee industry of Guji into what it is today. Shakisso holds organic certification for its farm and washing station where they collect coffee cherries from over 300 smallholder producers in the community. Gebre has partnered with many others to incorporate sustainable practices into the estate and the neighboring farms, and has contributed to the success of cooperatives across the region.
Guji has a reputation for producing some of the best coffee in Ethiopia. Delicate but nuanced, sweet and complex, with notes of stone fruit and citrus are what we often think of as classic washed Ethiopia flavor profiles. This lot from Shakisso is no exception. What’s truly remarkable is how this coffee upholds its Ethiopian character even after decaffeination.
Swiss Water Decaf has been an industry leader for decades, using a chemical free method to extract caffeine from green coffee beans, while preserving as much of the original flavor and character of the bean as possible. They achieve this with a bit of science and a solvent consisting only of water that is super-saturated with coffee solids. Because the solvent does not contain caffeine, the caffeine molecules in the green coffee migrate into the solvent, leaving behind all of the sugars and acids that make the coffee taste unique and delicious.
The Ruby sourcing team has been looking for a shining example of small batch, single origin decaf to bring to the menu and here we have it. The Swiss Water process was absolutely made for Shakisso’s sweet and layered profile of apricot, citrus, and baking spice. Whether you only drink decaf or never drink decaf, this hyper-limited, small-batch coffee will be worth a try!
