There is something certainly sublime about a great washed coffee from Yirgacheffe, especially when it's fresh in season. This one just arrived to the states and it's extremely exciting for us here at Ruby.
Produced by many small scale farmers in the famous Yirgacheffe region of Ethiopia, this particular wet process lot of heirloom varietal coffees is grown at elevations over 1800 meters.
What to say? In the cup it is both soft and explosive, almost sugary sweet with its depth. Dry fragrance brings along signature bergamot and some smells of dried fruits and roasted almonds. Clean, dynamic. Brewed up you'll find a refreshing but not dominating lemon acidity, subtle jasmine aroma and even some hoppy qualities, creamy body and silky honey finish, lingering notes of plum and fresh raspberry. We just can't say enough about the deliciousness of this coffee. Our roast highlights the softer and brighter sides so we recommend dosing up ever so slightly and stirring your brew a couple extra times if you tend to prefer bigger body.
