Juan Contreras inherited his father’s farm five years ago, when he was 23, but spent time as a child on the farm learning de-pulping techniques. As a second generation coffee farmer, the work Juan is able to do pursuing specialty coffee is built off of the cultivation that was started by his father. With a farm of healthy trees at the ready, Juan could take further steps in pushing for quality improvements to his processing techniques while seeing the higher premiums that specialty coffee gives.

Juan’s farm is named Miraflores, and it is named after the region. His uncle helps transport workers to the farm, everyday, and finding enough labor for the harvest season is one of his biggest challenges. Even as wages for picking coffee are increasing, coffee as an industry has to fight against better work opportunities that are showing up in cities.

Benjamin of San Vincente, an exporter that focuses on farmer education, helped Juan develop his processing technique. The coffee is de-pulped, allowed to ferment for 24 hours in a dry state before it is fully washed and heads to the solar dries.

Because Honduras is so humid, it can be difficult achieving even and consistent drying. Solar driers are basically greenhouses — the coffee is allowed to take in sun exposure, but since the interior of the solar drier is protected by a sheet of heavy plastic, moisture from the outside humidity can’t penetrate the drying coffee.

He believes his farm is special because of the native fruit trees he uses to shade his coffee, and the access his farm has to roads for operations. This release will hopefully build a stronger relationship for Ruby, and spark a larger release from Juan in the future.
