In Kenya, coffee quality relies on many different factors coming together — the small-holder farmers have to deliver top quality cherry, the wet mill has to have precision sorting and processing, and the exporter has to make sure that the coffee is packaged and delivered to the roaster with utmost care. We recommend brewing this one slightly stronger and quicker than some of our other coffees to emphasize the juicy fruits. Try a ratio around 1:15.5, ground medium-coarse, for a brew time around 3:00-3:30.
