Tasting Notes: Dark Chocolate - Almond - Red Raspberry - Caramel

The Salkantay farm operates under the Huadqiña Cooperative, who have been producing coffee in the La Convencion Valley since 1964. Only recently, have they been able to market and sell their coffees individually due to their release from a larger coop who’s rules restricted the quality of coffees Huadqiña was able to produce. Until only about 10 years ago, most coffee in Peru had been governed by these large cooperative groups that focused mainly on producing large quantities rather than growing quality coffee.

These large groups usually focused on securing certifications like Fair Trade and Organic as a way to drive prices forward, but as coffees were rarely sorted by quality, the opportunity for earning larger premiums was greatly hindered. As smaller groups have gained operational independence, coffee quality throughout Peru has greatly risen, as well as new opportunities for farmers.

Located near the Incan Ruins of Machu Picchu, La Convencion Valley is a 12-hour drive from the nearest town, and it spans across many peaks at extreme elevations. It’s the perfect environment for growing beautiful, bright, complex coffee, and groups like Huadquiña are only now able to pursue new opportunities.
