ROAST AND SHIP SCHEDULE

We ship all orders as quickly as possible. We roast on Monday, Tuesday, and Thursday. As of September 2021 we often roast on Wednesday and Friday as well. Orders placed by 3:00 p.m. Central Time the day before a roast will be guaranteed to ship the following day. 

We occasionally adjust this schedule based on holiday shipping restrictions and so on. 

SHIPPING METHODS

We ship UPS SurePost, UPS Ground, USPS Priority and USPS First Class. The default and most applicable shipping method will populate on checkout based on your items and shipping address.

Please let us know if you have special shipping requests.

We are not able to adjust or correct any addresses when shipping packages. Please make sure yours is correct before submitting your order for successful shipping service. 

SUBSCRIPTIONS

Ruby offers a variety of subscription options based on flavor preferences. You can schedule the subscriptions to match your preferred delivery frequency. 

To do this you’ll need to log into the Manage Subscription page (listed under account details). You can manage your shipping addresses, frequency, and all active subscriptions from this page. Subscriptions must be managed from this page, as the regular customer account info doesn't apply to subscriptions. 

Ruby now offers 3 and 6 month prepaid subscriptions for gifting.

DECAFFEINATION

Ruby offers a few decaf coffee options: Decaf Flume Seasonal Blend is a year-round blend of decaffeinated coffees, and occasionally Ruby will feature a single origin decaf option like Decaf Colombia Aguacate. Decaf Flume is made of coffees that were decaffeinated using the water process and the ethyl acetate "sugarcane" process.

We do not offer any "half-caf" blends right now, but we do think that either Creamery Seasonal Blend or Portage Seasonal Blend work really well with Decaf Flume and you're free to mix them together yourself in order to customize how much caffeine your coffee would have. 

CERTIFIED ORGANIC

As of January 2022, Ruby is an Organic Certified processing facility, which means that the coffees we source from a number of producers who hold an organic certification themselves can be sold as organic coffees. We’re proud to welcome our first organic flagship coffee Organic August into our lineup and continue to introduce new organic seasonal offerings throughout the year.

ROAST DEGREE

We roast our coffees to a classic medium degree in a way that is intended to balance the unique and distinct flavors of each offering with the dynamic, sweet flavors developed during the roasting process. Our goal is to create roasts that make for easy, consistently tasty results for our customers.

Our brightest coffees will generally be from Africa, while our most syrupy and rich will be from Latin America or specifically our Creamery blend.

Portage uses a base of coffees from Brazil and is now our heavier, more chocolatey blend in the lineup

SOURCING OUR COFFEES 

Our approach to sourcing is based on some key principles: quality, sustainability, transparency, passion, collaboration, long term relationships.  We work together with coffee producers, exporters, and importer partners to achieve responsible sourcing with an eye to the future.

We believe a successful, sustainable supply chain relies on a personal connection to the coffees and an understanding of the specific and unique challenges coffee producers face. These factors are always growing and changing.

We have visited producers in Nicaragua, El Salvador, Costa Rica, Guatemala, Honduras, Colombia, Kenya, Ethiopia. If you have any questions about specific projects or offerings, please get in touch.

SHELF LIFE AND STORAGE

We recommend drinking your freshly roasted Ruby coffee within 60 days of the roast date for optimal flavor. After this timeframe, there are no concerns with quality or food safety, but you may notice diminishing flavor. 

We recommend storing coffee in a cool, dry place. Your pantry is a great spot. We don’t recommend the freezer unless your bag is unopened and you plan on storing it there only until opened. The condensation from removing the coffee to brew and refreezing can actually age your coffee quicker. 

Our bags are the best way to store your coffee since they have a sealable zipper and a valve, but if you need to transfer your coffee into a new container, we recommend an air tight container.
