The Chemex is a classic coffee brewer designed by a chemist to mimic how liquids were filtered in a science lab. We love it because it serves as both the coffee brewer and as a server (along with being beautiful). It's the only piece of coffee equipment on display the Museum of Modern Art.
Because of the way the Chemex filter rests on the top of the server, the Chemex has a steady flow: as coffee drips into the bottom chamber, air being displaced escapes up the spout past the filter. This helps create slow, even draining.
Ruby has both the Classic version with a wood collar or the Glass Handle version with a glass handle. Both are 8-cup sizes, and require the appropriate Chemex filter.
