Jose Gil Perafan is a member of the Los Guacharos cooperative, which should be familiar to Ruby aficionados. Ruby has featured their coffee and even some lots from other individual coop members for seven years. Los Guacharos is made up of quality-driven, smallholder producers who operate independently but work together toward a common goal of growing organically and eliminating the use of chemicals. Los Guacharos’ community driven systems are a great example of producer-led innovation around soil health and cost reduction for farmers.
Of Jose Gil’s 10,000 coffee trees, 1000 are the pink bourbon varietal, which he planted five years ago. Many producers in the Los Guacharos cooperative, as well as others in Colombia, have been planting more pink bourbon, a variety that emerged in Huila in the 1980s. What’s special about pink bourbon? With its orangey pink cherries, it’s thought that it is a hybridized cross of red bourbon and yellow bourbon. Recent research might indicate that it is actually more closely related to Ethiopian landraces. Practically speaking, producers find it to be disease resistant, high yielding, and low maintenance. At the same time, it produces a unique and exciting flavor profile with high cup quality.
Jose Gil’s farm, which he inherited from his parents, is in the township of El Mesón in Bruselas. That name might also sound familiar. It is near the community where another pink bourbon variety lot we roasted this year was grown by Luz Divia Calderon. If you tried that lot, you know that pink bourbon shines with juicy, floral, and fruity notes. Jose Gil’s pink bourbon is all of that in an elegant and sparkling cup. Jose Gil handpicks ripe cherries and finishes processing and drying on the farm. They first go through a “cherry ferment” stage where they are sealed in a low-oxygen environment with a one-way valve for off-gassing. Then they are depulped and the beans are fully washed before being dried to optimal moisture content.
