Miller Ñañez is a newer member of the Guacharos, a group of independent, quality-focused smallholder producers in Bruselas, southern Huila. The group is transitioning to organic agriculture, making their own fertilizers and fungicides, and using water filtration systems that use gravity, stones, and sand to remove mucilage from wastewater.
Pink Bourbon is a variety that has gained popularity in recent years. The trees produce pinkish colored cherries, hence the name pink bourbon. Genetic testing shows it’s closely related to Ethiopian landraces. Producers appreciate its rust resistance, high yield, moderate fertilizer needs, and shorter height for easier picking.
This lot comes from Miller’s six-year-old Pink Bourbon trees. After harvesting ripe cherries, he ferments them in sealed bags with limited oxygen. He then de-pulps the coffee and moves it into new sealed bags for further low-oxygen fermentation (as he doesn’t have larger fermentation tanks). Afterward, the coffee is washed once, dried on his farm, and stored in plastic bags at his home to maintain stable humidity.
We’ve been looking forward to this one as it really showcases the washed pink bourbon profile. With dazzling complexity and notes like lemonade, raspberry sherbet, and cane sugar on the cupping table, it’s the perfect coffee to end summer on a high note!
