Decaf Nicaragua Elixir is a highly anticipated release from Swiss Water Decaf. This coffee comes from growers who belong to Nicaragua’s Gold Mountain Coffee, a social enterprise representing 70 producers. The group provide its members with scientifically oriented resources, facilities, and quality guidance. The end goal is for producers to sell higher quality coffee and earn a living wage. This highly traceable Elixir lot uses coffee grown primarily by Maximino Palacios and Marlene Hernandez, and a handful of other growers. The cherry was then processed by Finca Idealista with a combination of carbonic maceration and natural process. Natural processed beans are rinsed and placed out on drying beds with the entire cherry intact. In carbonic maceration, cherries are sealed in a tank before having carbon dioxide pumped in. The CO2 pushes oxygen out, creating an anaerobic environment. After 5-10 days of fermentation, the coffee is put out to dry on raised beds. The result is a syrupy, fruity, and pleasantly winey brew. 

The equipment necessary for controlled carbonic maceration can be a big investment and carries a lot of risk. Mitigation of these risks is just one of the benefits of a group such as Gold Mountain. Finca Idealista is able to use their equipment and wealth of experience with processing experimentation, allowing other farms to explore fermentation variation on their own coffees.

That brings us to the last step of how this coffee is processed. Swiss Water Decaf uses a chemical free method to extract caffeine from green coffee beans, while preserving as much of the original flavor and character of the bean as possible. They achieve this with a bit of science and a solvent consisting only of water that is super-saturated with coffee solids. Because the solvent does not contain caffeine, the caffeine molecules in the green coffee migrate into the solvent, leaving behind all of the sugars and acids that make the coffee taste unique and delicious.
