The Worka Chelbessa community in Gedeo has built a pristine reputation for producing extremely high quality coffee, and when computer part importer Negusse Debela wanted to pursue coffee as an endeavor, he first wanted to invest in this area because of that reputation. His export company, SNAP, was formed only in 2017, but has finished construction on their own dry mill which gives them full control of the quality of their exported coffees. 

Coffees at the Worka Chelbessa washing station are soaked for 36-48 hours underwater before being transferred to raised beds to dry for 10-14 days. While this is a pretty standard processing workflow, at Worka Chelbessa the fermentation water is changed constantly to prevent off flavors developing and to keep the coffee clean, and the drying coffee is heavily rotated and sorted to ensure even drying and consistent quality. 

SNAP’s main focuses are on coffee quality, farmer education, and environmental impact. By establishing an export company with aggressive standards, SNAP is able to ensure that the work that’s being done by farmers and at the washing stations is preserved through transport, delivering the highest quality of green coffee possible to coffee roasters around the world. 

This is our sixth year being able to offer Worka Chelbessa on our menu. Ruby customers can enjoy two Worka Chelbessa features: in our Organic August Blend and an extra special Grade 1 microlot as a Single Origin roast. Both lots showcase the intentional and honorable focus of this community of farmers including environmental impact, farmer education, and quality coffee.
