Tasting Notes: Blueberry - Brown Sugar - Date- Chocolate Cake
Arcadio Guerrero’s coffee farm El Barejon is located in the small village of El Horcon, in the La Coipa district of San Ignacio. Tucked into the Northern Peruvian Andes, near the Ecuador border, the area is known for its mining, for its agricultural clay and loam soils, and also for producing large quantities of coffee. Arcadio, his wife, and their two teenage children, grow coffee, plantain, orange, and yuca on their two hectare farm.
The farm has been in the family for three generations. The local climate and geography is perfect for growing coffee and of all their crops, coffee is what sustains the family. Growing coffee for their livelihood is both a challenge and a joy for Arcadio. Climate change, and an increase in pests and diseases have made things difficult, but he is proud of the incremental improvements they’ve made in cup quality and continues to learn and employ new technology to become a better producer.
Arcadio begins harvesting with the help of his family and 10 seasonal hired pickers. They selectively harvest from each tree, only picking the cherries that are the color of red wine. The cherries are then floated in a tank where impurities are sorted out. The clean cherries then pass to the fermentation tank where they sit for 24 hours, are depulped, and then fermented for another 12 hours before the mucilage is completely washed off. The beans are then dried in the sun for up to 15 days.
Arcadio’s pride and dedication really shows in this exciting and unique lot, bursting with fruit notes that shine against the backdrop of the more distinctive chocolate notes of the region.
