When Bon Iver's team reached out to collaborate on a special release for their upcoming album, we were honored and thrilled. The answer was obviously a resounding YES. As longtime fans and fellow Wisconsinites, working with Justin Vernon and his team felt like a natural fit. We’re thrilled to introduce two limited-edition coffees, crafted to complement the sounds of SABLE, fABLE, releasing Friday, April 11. Designed to be enjoyed together but just as exceptional on their own.
SABLE Decaf Flume
Inspired by Flume Creek, a quiet trout stream near our roastery in Nelsonville, Wis., Decaf Flume is a sweet, reliable blend crafted for all-day enjoyment. It combines a creamy, chocolaty water-process Brazil with a lightly fruity Colombian coffee, creating a rich, robust cup perfect for espresso or a cozy evening drink. Decaf coffee requires extra care to produce at high quality, and at Ruby, we embrace it—so we can drink coffee all day long!
fABLE Colombia Samuel Gaviria Pink Bourbon
At Ruby, we have a soft spot for Pink Bourbon—a unique coffee variety with its distinctive pink cherries and vibrant flavor profile. Grown with care at Las Palmas, a small estate farm in Huila, Colombia, Samuel Gaviria and his family cultivate this exceptional coffee with dedication. In the cup, it shines with juicy notes of strawberry and cherry, a bright hint of lemon-lime, and a smooth milk chocolate finish. It's a beautifully balanced coffee that’s as enjoyable as it is unique.
